Hoff shows you how to make the BEST burger at home by grinding your own custom burger blend, making his spicy Firecracker Pickles, and topping it all off with Hoff's Smoken Ghost spicy mayo.
1.5 pounds Chuck Roast cut down to 1 inch cubes
1 pound Sirloin cut down to 1 inch cubes
.5 pound Bacon, chopped
1/2 cup mayonnaise
2-3 tablespoons Hoff's Smoken Ghost hot sauce
Salt and pepper to taste
Hoff's Firecracker Pickles (Recipe Below)

Mix together the chuck, sirloin and bacon and distribute evenly on a baking sheet. Place the meat in the freezer for 30 to 45 minutes to partially freeze the meat.

Using a meat grinder or food processor, grind the meat and form into 6 half pound patties.

Grill the burgers until the internal temperature reaches 145 to 160.

Combine mayo and Hoff's Smoken' Ghost hot sauce in a bowl and whisk together till combined.

Serve burger on a toasted brioche bun with Hoff's Smoken Ghost Mayo, Hoff's Firecracker Pickles, cheese, lettuce, and tomato.

1 habanero, thinly sliced (optional)

Place the sliced cucumber, onion, and habanero in a mixing bowl, then prepare the pickling liquid.

In a small saucepan over medium heat, mix together vinegar, sugar, mustard seed, Dirty Dust, garlic, dill, and bay leaf. Heat until it starts to simmer, then pour over vegetables and mix to coat.

Let sit for at least 2 hours and will last up to a week in the fridge.
