Hoff shows how to make the most delicious and simple 4 ingredient smoked hot wings! Smoked hot wings can be soggy, but Hoff fries them at the end to crisp them up, then tosses them in his delicious Hoff Wing Sauce!
4 lbs. Chicken wings
2 Tbls Hoff's Dirty Dust Seasoning Salt
1/2 cup Butter
2/3 cup Hoff Sauce Hot Sauce
1:
Prepare your smoker by getting the temperature leveled out at 250 degrees, the ideal temperature for this recipe. A milder wood like pecan or apple is recommended for smoking but any wood will do.
2:
Apply Hoff's Dirty Dust Seasoning salt to both sides of your wings and smoke for 1 hour. They will not be done yet as we're going to finish the cook in a deep fryer to get the skin crispy.
3:
Once smoked, let them cool down to room temp or even hold them in the fridge overnight. When you're ready to finish the wings, get a deep fryer up to 375 degrees. Fry the wings in batches until they are crispy and the internal temperature of the wings reach 175 degrees.
4:
While the wings are frying melt 1/2 cup butter in a sauce pan and stir in 2/3 cup Hoff Sauce until the wing sauce is warm.
5:
Place the fried wings in a large mixing bowl and pour the wing sauce over the wings, tossing them in the bowl until fully coated. Serve immediately with your favorite dressings and vegetables.
