Hoff is self quarantined and using this time to show you how to make delicious and easy stuffed peppers. Learn how to make this quick and easy meal with items you may have access to in your pantry and how to substitute ingredients if you don't have certain things.

INGREDIENTS:

4 bell peppers any color

1 medium onion, chopped

1 pound ground beef or pork

1 can beans, drained and rinsed

1 ½ cups cooked rice

1 cup fresh, frozen, or canned corn

1 can Rotel or other canned tomatoes

1 tablespoon Hoff’s Chuckwagon Chili Powder

2 teaspoons salt

Preheat oven to 350 degrees. Cut the tops off the bell peppers and remove the seeds and veins inside.

Heat a saute pan over medium high heat and add ground pork and onions. Saute for 5 minutes or until brown.

Add pork and onions to a mixing bowl along with beans, rice, corn, tomatoes, Hoff’s Chuckwagon Chili Powder, and salt. Mix well and then put mixture inside bell peppers.

Place the peppers in an oven proof pan or pot that makes sure they stand up. Put tops back on the peppers and bake at 350 degrees for 30 minutes or until the peppers reach your desired tenderness.

Serve with cheese, cilantro, sour cream and Hoff Sauce!
