FOR THE DUMPLINGS:

1 pound ground pork

4 cloves minced garlic

½ cup finely chopped green onions

3 tablespoons grated fresh ginger

1 tablespoon soy sauce

2 tablespoons Hoff’s Original BBQ Sauce

1 teaspoon sesame oil

1 ½ cups finely chopped green cabbage

2 ½ cups all-purpose flour, or more as needed

1 teaspoon kosher salt

1 cup hot water, about 130 - 150 F (55-65 C)

DIRECTIONS:

1:
First off, grab a mixing bowl and throw in your ground pork, chopped up green onions, garlic, ginger, soy sauce, and sesame oil. Now, for the game-changer – add that Hoff’s Original BBQ sauce for a smoky BBQ kick, followed by the finely chopped green cabbage. Give it a good mix with a fork until it’s well combined. Press it down lightly, cover it with plastic, and let it chill in the fridge for about an hour to get all those flavors nice and cozy.

2:
Next up, it’s dough time. In another bowl, mix together your flour and kosher salt. Slowly introduce hot water while stirring with a wooden spoon. You’re aiming for a shaggy dough consistency. Flour up those hands and get kneading on a work surface until your dough is smooth and elastic, about 3 to 5 minutes. If it’s sticking more than your aunt’s holiday hugs, sprinkle a little more flour into the mix. Once you’ve got your dough feeling just right, wrap it up in plastic and let it rest for about 30 minutes.

3:
After your dough has taken a nice little nap, split it into four equal pieces. Keep three covered while you focus on one. Roll it into a log, then slice it into six pieces. Roll each piece out on a lightly floured surface to about 3 ½ inches in diameter to make your pot sticker wrappers. Keep at it until all your dough is shaped up.

4:
Now, for the assembly. Lightly dampen the edges of your wrapper, plop a scoop of your pork mixture in the center, and start folding and pleating like you’re sealing in all the secrets to the perfect bite. Give each potsticker a gentle tap to flatten the bottom so they sit pretty in the pan. Plate them up on something floured while you get ready for the next batch.

5:
Let’s talk dipping sauce – mix your seasoned rice vinegar, soy sauce, fresh ginger and Hoff Sauce hot sauce in a bowl for that tangy kick.

6:
Heat up 2 tablespoons of oil in a skillet over medium-high heat. Place your potstickers flat side down and let them sizzle to a golden brown, about 2 minutes. Add a splash of water, cover, and let them steam for a magical transformation. Uncover, let the water evaporate, and watch those bottoms get irresistibly crunchy. Scoop them onto a warm dish and go again until all your potstickers are ready to impress.

7:
Serve these golden beauties hot with your homemade dipping sauce and watch them disappear. Enjoy the feast, courtesy of Hoff’s kitchen to yours!
