Ultra Flaky Buttermilk Biscuits Recipe

These biscuits make for the perfect, fluffy vessel for anything whether it's gravy, casserole, or stuffing. Or you can eat this buttery cloud of deliciousness by itself! 

Yield: Serves 9 

Time: 1 Hour

Ingredients:

  • 3 cups all-purpose flour
  • 2 tablespoons sugar
  • 4 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoon salt
  • 2 sticks unsalted butter, partially frozen in the freezer for 30 minutes
  • 1¼ cups cold buttermilk

Directions:

  1. In a large mixing bowl, whisk flour, sugar, baking powder, baking soda, and salt together. Coat sticks of butter in flour mixture, then grate 7 tablespoons from each stick on large holes of a box grater directly into flour mixture. Toss gently to combine. Set aside the remaining 2 tablespoons of butter.
  2. Add buttermilk to flour mixture and fold with a spatula until just combined (dough will look very dry and crumbly). Transfer dough to a floured counter. Dust the surface of the dough with flour and using your floured hands, press dough into a rough 7-inch square. 
  3. Roll dough into a 12 by 9-inch rectangle and continue to press together if it crumbles. Using a bench scraper or long spatula, fold the dough into thirds like you would a business letter. Rotate the dough 90 degrees and roll it back into a 12 by 9-inch rectangle and fold into thirds again. Repeat this process until you have done 5 total folds. 
  4. Roll the dough into an 8½ inch square that is 1 inch thick. Wrap with plastic wrap and refrigerate for 30 minutes. Preheat the oven to 400 degrees and adjust your oven rack to the upper-middle position.
  5. Transfer dough to a lightly floured cutting board. Using a sharp chef's knife, trim ¼ inch of dough from each side of the square. Cut remaining dough into 9 squares. Arrange biscuits on a parchment-lined baking sheet, at least 1 inch apart. Melt the remaining 2 tablespoons of butter and brush the tops of the biscuits. 
  6. Bake until the tops are golden brown, about 25 minutes, making sure to rotate the sheet halfway through baking. Cool 15 minutes before serving.

This Mac & Cheese recipe puts all others to shame. Sure to be hit with everyone- you'll find yourself making it year-round! 

Yield: Serves 8 

Time: 45 minutes

Ingredients:

  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 16 ounces sharp cheddar cheese, grated (4 cups)
  • 1 cup heavy cream
  • 2 tablespoons Hoff's Wake Up Call Hot Sauce
  • salt to taste
  • 1 pound macaroni, took to the al dente stage, drained, and cooled 

Directions:

  1. Preheat oven to 400 degrees F. Meanwhile, melt the butter in a saucepan. When bubbly whisk in flour and cook for a couple of minutes, stirring every now and then.
  2. Slowly whisk in the milk and bring to a boil. Reduce the heat to low and simmer, whisking on occasion for 3 to 4 minutes. 
  3. Remove pan from heat and whisk in 3-cups of grated cheese. Stir vigorously just until cheese has melted. Then whisk in heavy cream to adjust the texture and add Hoff's Wake Up Call hot sauce season to taste with salt. 
  4. Transfer mixture to a 13 x 9-inch baking pan spread it out evenly. Sprinkle the remaining cup of shredded cheese over the dish and bake until hot and bubbly, about 20 minutes. Let stand 5 minutes before serving. 

Thanksgiving Chicken & Cranberry Apple BBQ Sauce

Intimidated by the daunting task of cooking an entire Thanksgiving turkey by yourself? Or maybe you're just not a fan of turkey? Whatever the reason, we have the solution- Thanksgiving chicken! 

Yield: Serves 4

Time: 2 hours

Thanksgiving Chicken Ingredients:

  • 1 whole chicken (4 to 6 pounds)
  • ½ cup butter
  • 3 cloves garlic roughly chopped
  • 5 sprigs of fresh thyme
  • 4 sprigs fresh rosemary
  • ½ teaspoon salt

Directions:

  1. Prepare chicken by removing the neck and giblets and then patting the chicken dry with paper towels on the outside as well as inside the cavity. Using kitchen twine, truss the chicken to ensure even cooking.
  2. In a saucepan over medium low heat, melt butter and add in garlic, thyme, sage rosemary, and salt. Simmer on low for 15 minutes to let the herbs release their flavor in the butter. Strain the butter into a cup and let cool for 15 minutes. 
  3. Fill a meat injector with the butter mixture and begin injecting small amounts of the liquid all over the chicken, being careful to inject so much that it squirts back out. Once injected, lightly dab the skin to remove excess moisture and place in refrigerator for at least 6 hours to overnight to let the skin dry out and get crispier while cooking. 
  4. Preheat oven to 450 degrees and bake for 15 minutes, then reduce the temperature to 350 and roast for 20 minutes per pound or until the temperature of the inner thigh reaches 165 degrees. 
  5. Pull out of the oven and let rest for 10 to 15 minutes uncovered before serving. Serve with Cranberry Apple BBQ sauce. 

Cranberry Apple BBQ Sauce Ingredients:

  • ½ pound fresh or frozen cranberries
  • 2 medium granny smith apples, peeled and diced
  • 1 cup apple cider
  • 2 tablespoons brown sugar
  • 1 cup Hoff's Original BBQ Sauce

Directions: 

  1. In a small saucepan over medium heat add cranberries, apples, apple cider, and brown sugar and bring to a boil. Simmer until fruit is soft and the liquid has been reduced by half. 
  2. Mix in Hoff's BBQ Sauce and bring back to a simmer. Cook for 3 minutes. 
  3. Serve warm with chicken, turkey or pork. 

Turkey Bacon Avocado Panini with Honey Chipotle Dipping Sauce

Wondering what you should do with all of that leftover turkey sitting in your fridge? Don't worry, we've got a recipe for that too. 

Yield: Serves 4

Time: 30 minutes

Turkey Bacon Avocado Panini Ingredients:

  • 8 slices thick-cut bacon, fried
  • 4 ciabatta buns or 8 slices of bread
  • 8 to 12 ounces of cooked turkey, sliced or pulled
  • 1 avocado, sliced
  • 8 slices provolone cheese
  • 2 tablespoons melted butter
  • Hoff's Honey Chipotle Dipping Sauce

Directions:

  1. Heat a cast-iron grill pan over medium-low heat. Separate the buns and begin layering the ingredients on the bottom bun. Lay a slice of provolone then turkey, avocado, and another slice of cheese. 
  2. Brush the tops of the buns with butter and place them, top side down on the grill plan. Press down the sandwich with a panini press or a cast-iron skillet. 
  3. Cook for 2 minutes, then turn the sandwich a quarter turn and add back the weight. Cook for another two minutes, then brush the sandwich bottom with butter and flip over, repeating the process that you did with the first side. 
  4. Serve with Hoff's Honey Chipotle Dipping Sauce.

Hoff's Honey Chipotle Dipping Sauce Ingredients:

  • ½ cup of mayonnaise
  • ¼ cup honey
  • 3 tablespoons Hoff's Smoken Ghost Hot sauce

Directions:

  1. Whisk all ingredients together in a mixing bowl and serve!
