INGREDIENTS:

8 cups chicken stock or broth

2 tablespoons reduced sodium soy sauce

3 cloves garlic, minced

2 teaspoons ground ginger

1 (8-ounce) can bamboo shoots, thinly sliced and drained (Optional)

10 ounces shiitake mushrooms, thinly sliced and stems removed

½ cup rice vinegar

⅓ cup cornstarch

2 large eggs, lightly beaten

8 ounces extra-firm tofu, drained and thinly sliced

2 tablespoons Hoff’s Wake Up Call hot sauce

1 teaspoon sesame oil

4 green onions, thinly sliced

Salt to taste

DIRECTIONS:

1:
In a large stockpot combine chicken stock, soy sauce, garlic, and ginger. Bring to a boil over medium heat. Stir in mushrooms and bamboo shoots and reduce heat to simmer. Cook until mushrooms are tender, about 8 minutes.

2:
In a separate bowl, whisk together the rice vinegar and cornstarch and slowly stir in the mixture with the soup. Continue stirring until thickened, about 1-2 minutes. Then gradually pour in your beaten eggs while stirring and stir for about 2 more minutes.

3:
Add Hoff’s Wake Up Call sauce, tofu and sesame oil and serve topped with green onions.
